From the foreword: In no department of industry has the last century brought greater changes that in the department of housekeeping. Then, the housekeeper was at the head of, and the principal worker in, a manufacturing plant in which was made nearly everything used by the family (candles, soap, material for clothes and the clothes themselves, converting raw ingredients into food, etc)...

While food has still to undergo some measure of preparation within the household, and while there are still a sufficiency of duties for the housekeeper, the work has been greatly simplified and made easier by the invention of many labor-saving devices, appliances and processes... the duties of the housekeeper are coming more and more to be the spending of a definite amount of money for a great variety of ready-prepared articles, the most successful housekeeper being the one who can spend the money to the greatest advantage...
